Raw Honey

Raw honey is honey that has not been heated or extensively filtered, preserving its natural nutrients, enzymes, and distinct flavors. It’s sought after by consumers who value minimally processed products with local floral characteristics.

Raw Honey

Raw honey typically goes from hive to jar with minimal intervention, giving it a unique flavor profile and appearance that reflects the season and local flora. Because it isn’t heated to high temperatures, raw honey retains much of its naturally occurring enzymes, antioxidants, and pollen. Beekeepers often sell raw honey at local farmers’ markets, through community-supported agriculture (CSA) boxes, or via boutique retailers looking for specialty, terroir-driven products.


Marketing raw honey involves educating customers about its varietals—such as wildflower, clover, or macadamia blossom—and explaining the benefits of consuming a less-processed sweetener. Many people appreciate raw honey for its potential health attributes and the way it highlights local ecosystems. Small-scale producers also benefit from direct-to-consumer sales, often commanding a premium price for unique and unadulterated honey varieties.
