Eggplant

This includes Japanese, Chinese, and globe eggplant varieties that flourish in warmer conditions on Hawaiʻi Island. Most output supplies local restaurants, produce stands, and neighborhood markets.

Eggplant

Eggplants require rich soil, moderate irrigation, and vigilant pest control (such as monitoring for mites and fruit borers). Growers often choose slender Asian cultivars for stir-fries and curries, but also plant classic globe types for grilling. Chefs appreciate the fresh, tender fruit that often outperforms imports in terms of taste and texture. In general, eggplant remains a moderately valued specialty vegetable, with a stable market outlook supported by both home cooks and professional kitchens.
